In this pic, the fish is oriented with the head to the left, lift the pectoral fin with your left thumb and insert the knife at an angle as shown.

Keeping the knife at the same angle, cut straight down and connect into the first cut you made. You will actually have the blade in between a rib bone and the blade will come out just in back of the pelvic fins.

Turning the kife blade around with the cutting edge up, insert the blade back in at the same angle as before. Cut up until your blade contacts the backbone. You will let a couple of scales fly, but don't worry, your knife is sharp, right?

Now, sheephead have a chink in their armor, their scales have a "seam" if you will. Here I am lifting it up with my thumbnail.
