Continue on down to the tail...
Move back up to the nose of the fish and make your follow-up cut. This time you should go on down to the backbone BUT NO FARTHER! Continue on down to the tail.
LIFT up the fillet as in the pic and cut up slightly and over the backbone and then down again. It's simpler than it sounds.
The backbone is round, go up and over and then along the bones again...
